cauliflower pizza crust…take 1

morning, friends! 

Recently I’ve send a lot of fun recipes using cauliflower. this recipe for cauliflower pizza crust came across my Facebook news feed and I was intrigued.  So I tried it out just for fun. 

( FYI… While I have friends who do have special dietary needs, I do not.  I simply wanted to deconstruct and try something new ) 

In her recipe she says to bake the mixture on parchment paper.  I didn’t have any so I used aluminum foil.  

  

Big.

Mistake. 

Even with though I brushed olive oil on the foil, it still stuck. ( parchment paper is now on my grocery list )  

I tried a second batch on a silpat liner, adding 1/4 cup of freshly shredded Parmesan cheese ( knowing how parm melts and the hardens when cool). It was perfect! 

  

Cauliflower pizza crust ( Original recipe here courtesy of Detoxinista)

2 cups cauliflower, riced ( cooked cauliflower pulsed in a food processor until it looks like grains of rice) 

1egg, beaten 

1/4 cup freshly grated Parmesan cheese 

1/4 cup soft goat cheese

Pinch oregano

Sea salt and pepper 

Preheat oven to 400 degrees 

Once cauliflower is riced, place in fine mesh strainer and using a soft spatula, press as much fluid out as possible. ( that’s the key to the crisp crust ) 

Then take the cauliflower mixture and roll in paper towels until it’s super- dry 

Mix all ingredients together. 

Using your hands, spread the mixture on parchment paper ( don’t skip this part 😁) 

Bake at 400 for 25-45 minutes, depending on thickness of crust. ( I like mine thin, it was done in 25 minutes… She made a thicker crust, so I’m sure that was closer to 45 minutes. 

Remove from over and top with toppings 

  

  

I used a fresh tomato, diced , seasoned with salt and pepper ( salt  draws out extra liquid) for 5 minutes, then squeeze out extra liquid 

 Shredded mozzarella

A few pieces of fresh mozzarella 

Back in the oven under the broiler until cheeses melt 

Top with crumbled procuitto di Parma, shredded basil, and a drizzle of balsamic vinegar   

Now, my crust was a little bit to dark around the edges but I’m pretty sure that had to do with the foil.  Does this taste like a traditional pizza crust? No.  Is this tasty? YES!  It’s really really good! And it feels pizza like since you can pick it up and eat it. 

The crust itself is fantastic, you could eat it like a cracker with hummus perhaps?  But adding the pizza topping s made it over the top.

creamy buttermilk lemon-herb dressing

Yes. You heard me correctly.

Last night I had a couple of friends over to carve pumpkin ( yup… It’s not just for kids 😉)

I take any advantage to make PIZZA. Even if it’s Thursday night,not Friday.

( the pup was uber happy to get pizza crust a day early )

Since I thought we should be all healthy ‘n stuff, I thought a salad was appropriate. Then I thought buttermilk dressing. And I was off!

You’ll need

1/2 cup buttermilk ( sounds unhealthy… It’s actually low in fat )
2 TBSP Light mayo
2 TBSP creme freche or sour cream
Zest and juice of 1 lemon
2 TBSP olive oil
Chives, chopped ( I used a small bunch )
1/4 cup chopped parsley
Freshly ground pepper
Sea salt to taste

Add it all to a small mason jar ( heads up, there are measuring marks on the glass, so this is truly a one dish thing to make )

Put the lid on and shake

Taste for salt and pepper and enjoy!

Ry and Ali went to visit Jamanda for a week, leaving Scott and I ( and Fenway) with our first * taste* of our empty nest.

What’s really strange is that this is the very first time that Scott and I have lived alone !

We took Fenway with us, south to Colorado springs to a place called Gardens of the Gods… beautiful rock formations to ‘hike’ all around..

I know none of this sounds horribly exciting, but it’s a start.  I did get my new grill this weekend so I have been playing ALOT!  I have a bunch of recipes to share but i am struggling SOOO fsr-eak-en badly with the technology part of this.  I’m researching other options.. this is downright maddening!

I had much more too share with you in this post, but it has taken me almost 2 hours to post this little bit. UGH!

I will leave you with a few more pics of our Sunday… Hopefully I will get this figured out soon..

friday thoughts

hello friends 🙂

I have a confession… I woke in quite a sour mood this morning.  You see, I have a lot going on behind the scenes here… some of it I’ve eluded to, some I’m not ready to just yet… In due time, I shall share.  For right now, I have moments of ups and downs and this morning was a ‘down’

After a completely ineffective pity party for myself. ( like that ever works..) I decided to go for a ‘run’ ( ok. ok.. jog/ walk) but still… it feels important to me 🙂

And I got to thinking that if I started to think of good things form this week gone by then I would be better off.. so here I present to you

my reasons to smile

1~ ( I know you are all sick of hearing this.. but years from now I will look back and want to be part of this weeks’ memories) I ran my first 5k….  you need to know that this was one of those things that I pictured that I would be sitting in a rocker with Scott ( ok.. he could have his own next tome.. but you get the idea 😉 ) when I was 72 saying, ” ya know hon.. I probably could have done that way back when I was 41 if only I tried.”

2~  in regards to THIS post, which I wrote as a thank  you to all of those who have helped me along the way with my personal journey… I received a lot of sweet responses that quite frankly , blew me away. I love you guys.

the next day I received a series of text messages from Amanda, my daughter-in-law… I was on the phone at the time, so I didn’t get them until all at once.  which turned out to be even better…

seriously…. how could this NOT make me smile????  I’m so blessed that she & Jason found each other 🙂 I love you both!

3~I met a friend at Mayflower brewing company last night.  Many many many years ago we worked in the same salon together…  I think it is extra-special when you can meet up with an old friend and it’s like time hasn’t passed at all.

I’m finding more and more that re-connecting with my old friends is reminding me of this path that I have taken to get to here and that I am so lucky to have had all of you in my life…

* I actually ran into another old friend yesterday that I have seen in about 15 years… to put it in perpective, Scott and I dropped Jason off at her house the night I went into labor with Ryan*

~the irony? it was at the running store.

and some people don’t believe in this whole ‘connection ‘ thing.

4~ I used to DESPISE Norah Jones… in my opinion, She stole the Grammy away from Bruce for his album ‘The Rising’..his amazingly awesome tribute ALBUM  to 911( not just one song folks.. A WHOLE ALBUM ) I was bitter for years. ( I remember being in the salon the morning after the Grammys talking to my clients… ” who the hell is this Norah ( said with extreme distaste)”….

then something happened and I kinda fell in love with her :).. yup  girl crush here. I’m ok with that .  I listen to her on rainy days… somedays while staring out at the ocean.. I have a Pandora station of her music ( as well as her cds ) While I have heard this song and SANG this song.. I only figured out about an hour ago what it its about..

5~ I’m making THIS for dinner.. It’s Homecoming weekend and the girls are out most of the weekend.. and Scott is actually home.. so I can have fun with these ingredients. which sent me out in search of figs and I found

…….a sale on Oregon cheese and Washington apples!!

and as silly as it sounds, it makes me feel closer to Ryan…. so I bought them… I think we will open one of the bottles of Willamette Valley Pinot Noir tonight to go with this  🙂

aaaachctober!!!!! *bring on the boots!!*

YAY! It’s finally here!! My very favorite month… of the whole entire year. (December is a close second) 😉

and it’s Friday, which means pizza night at Casa Hagg.  I happened to come across some fresh figs *hops* and just knew that they were pizza-bound.

I started with my pizza dough.. sometimes I buy it already made and sometimes I make it myself.  There is no rhyme or reason as to which one I choose.

The spirit moved me to make it , so that is exactly what I did

I’ve made it both in my food processor & in my kitchenaide mixer. My food processor was in the dishwasher, so the mixer won!!

While the dough was rising, I by caramelized some onions..

I melted some butter ( the REAL thing) over low heat, then add the onions & stir to coat. Add a  sprinkling of Kosher salt & let them slowly cook ..

I love these little medallions of goat cheese from Trader Joe’s … Each one is just enough for a pizza topping or a salad, with nothing extra  to have to eat.

Did I say eat? I meant wrap.. Yeah, THAT’s it.

**I also got a whole bag of these medallions for FREE!!  The UPC code was on the twist tie that close the bag with all of the rounds of cheese was missing. I ran back to get a new bag for the cashier & she rang it in & put both in my bag, telling me that they can’t sell it that way.. so SCORE for me:)**

where were we?  oh, yeah..pizza….

After rolling out the dough, I drizzled a little EVOO on the dough & topped with some mozzarella, the goat cheese,; crumbled, the figs; sliced  & the caramelized onions.

I cooked it on my pizza stone in a 500 degree oven for about 10-15 minutes

When the pizza came out of the oven, I topped with some toasted walnuts, fresh sage & a light stream of farm fresh honey

we had a side salad with all of the same toppings over arugula. Overkill? perhaps.. but Neither Scott nor I complained..

I always say that you can’t have too much of a good thing 😉

The East coast deluge finally hit us this afternoon. The girls in these house are all smiles….

why you ask??

Because we finally both got Rain boots!!

umm… full disclosure.. I have a wicked boot obsession 😉

So. So. Cute.

and Ali’s just as cute!! VERY her 🙂

I love that she is just as dorky / nutty as me when it comes to this stuff.  When I said, “Ali, I want a picture of your boots” she said, “ok.. let’s go find a puddle to jump in!!”
