friday/ saturday smiles

I started this post on friday, but life got away from me.

so here ya go..

happy friday, friends.

this will be an abbreviated version of friday smiles.

1~ I’ve had a bit of a rough week over all, and am beyond grateful for those who reached out to me in one from or another. It’s really made me special and loved.

so YOU.. you are making me smile this week. and thank you immensely for that ❤

I love that I have friends all over the country who really know me so well 🙂

when I was in YTT we discussed the ‘ inner connection cord’ that yo have with certain people. Like when you are thinking about them and then they call or email out of the blue ? 

yeah.. I really like that 🙂

2~ Fenway’s pet squirrels.

yup. it’s true. we have a family of squirrels that live in the most amazing tree in the back yard.

and they taunt Fenway.  And Fenway taunts them. for hours.

the squirrels will chirp down to her, run halfway down the tree, then she will try to ‘ jump’, and they will bolt back up the tree, then come down on the other side, where she will run, and they will chirp and run back up the tree

they do this for HOURS

3~ my mistakes..on my facebook page I set up a little food challenge… and quinoa was one of my ingredients ( and fave foods, btw)

so I got my recipe all prepped for a quinoa salad, cook the quinoa

annnd..

discovered it was millet .

Why do I have millet? I haven’t a clue.

So as soon as I’m dine with this post, I’m hopping on my bike ( remind me to show you a picture of this beauty) and getting me some quinoa so I can share my recipes.

I came across it yesterday when I was looking for something else.  It made me smile

my 14 seconds of fame 🙂

AND.. my BIGGEST smile comes from a west- bound plane tonight that is bringing a very special girl to me 🙂

SQUEALL!!!  it’s been almost 4 weeks, and I miss her. I’ll have 6 short days with her until I drop her off for her freshman year of college.

today what I have for you I cannot really call it a recipe. at all. in fact, I don;t know what to call it other than genius.

I can do that, it’ my blog and my happy place and I make the rules and I called it.

Ok.. let’s backtrack a little bit, I love to tell a story. Pull up a chair. grab your blankies.

When I was visiting my sister last month we had a day ( my niece’s graduation party day) that we were running 10,000 errrands and although we stopped to get tea, I a;ll of a sudden got one of those

out-of-the-blue-oh-my-God-I -need-to eat-RIGHT NOW kinda feelings.

I know you know what I’m talking about 😉

She happened to have a protein shake in her backseat ( that girl is always prepared ) and although I like to ‘eat’ my meals, it was actually pretty good and did a great job of quieting the beast that is can be my stomach.

So fast forward. It’s Thursday of last week, and I’m picking up a prescription from Target ( which has an excellent prescription rewards plan, BTW.. every 5 scripts and you get a 5% coupon for one whole day at Target!!)

and there’s a problem with the script… so after calling the doctor, we fixed it but I was going to have to sit there for 30 minutes. Bored and alone.

and guess who came to visit? That nasty hunger beast again.

remembering That it did the job when I was with my sister, I picked up a 4 pack and managed though the next 1/2 hour ( without wandering the store and loading up my cart with Target stuff…. now this I KNOW y’all know what I’m talkin’ about.

The flavor that I had at my sister’s was strawberry. Because I’m all into ‘livin’ on the edge lately’, I bought chocolate fudge.

* show of hands who knows where I’m going with this *

yup! straight to the freezer!

Imagenow does this taste exactly like a full fat fudgsicle?

probably not, after all, this isn’t Oz..

but it was a pretty good replica.. and the perfect snack after a walk ( or run, bikeride, yoga..)

high protein, and cold and refreshing.

If this turns out o be as fun as I hope it will be , next week I will have anyone who wants to suggest a food give me one item each. I will but them into a hat and randomly pick 4.

Busy weekend ’round here. My talk at the breast cancer walker

information session was quite easy. No one showed 😦

I was able to meet my ‘walker buddy’,  Jennifer & got some of the behind -the-scences information. She mentioned that during the winter she has info sessions with upwards of 30 people, and wanted to know if I felt comfortable coming to one of those.
She asked me if I could bring some of  my quilts that I’ve raffled

which means that I need to start to think of what kind of quilt I will make for 2011…

Then Scott & I went to Plato\’s Harvest Organic Farm for our CSA

Sat night there was a surprise 40th birthday party for a friend that included a Limo trip into  Boston & an award-winning broadway show Rock of Ages ..

SO. MUCH. FUN.

While the girls were in the city.. the boys were making ‘man food’

I know, I know… mom of the year, right?

Then Saturday morning we were up early *yawn* to head back to the farm to participate in the annual garlic planting party!!

and it was held in conjunction with the 350 mission

we began with separating the garlic heads  into cloves

this took us almost 2 hours…. we’re talking LOTS of garlic!!

then Farmer Dave prepped the one of the fields for planting

with a couple of cuties along for the ride…

we planted.. and planted. and planted.then we had lunch!!

quite possibly the best lunch that I’ve EVER had.  Everyone’s addition to this pot luck was over-the-top!!

Then we dug for some taters…

My contribution for the day- (food wise) was my

Cranberry-Cashew Quinoa Salad

Ingredients:

cranberry-cashew quinoa salad

1 cup quinoa , rinsed

1 cup chicken stock

3 cups h2O

1 cup dried cranberries

1/2 cup cashews, toasted

1 medium red onion, chopped

1 bunch parsley, chopped

1 bunch mint, chopped

1 small carrot, grated

1 whole lemon, zested & juiced

1/4 cup  canola oil

a few splashes of Raspberry wine vinegar

Kosher salt & pepper

what to do:

In a large saucepan, bring rinsed quinoa, stock, a dash of salt & water to a boil; Reduce to a simmer & let cook for 20 minutes.

if there is any excess liquid, drain it, but don’t rinse.

Add remaining ingredients & toss to combine. Season with salt & pepper.

This is one of those fhb dishes that is delicious hot or cold or even room temperature ( which is wonderful for a pot-luck)

I let the quinoa come to room temp before I wrapped it for the party…..

yum!
