While at whole foods this past week, there were stations sampling different items. One woman had a spinach salad with this dressing. It is delicious & has No oil in it!! (Of course there still is the fat from the avocado) It makes such a creamy tasty dressing.
3 green onions; trimmed
1/2 avocado, peeled & pitted
1/2 cup orange juice
( I also added a handful of parsley, but the original recipe didn’t call for it)
Seas salt & pepper to taste.
Add all ingredients to a food processor or blender & blend. I used this.
I’ve been making this & tossing it with baby spinach, a bit of fruit ( last night was sliced strawberries, but I’ve also used orange segments as well ) a tablespoon or so of sunflower seeds and some finely chopped red onion.
