Given that it’s game day and all, I thought I’d share a recipe I made up this am.
Chicken wings are an all-time favorite snack, but they are not exactly the healthiest.
I’ve seen some recipes for a buffalo chicken dip that is really tasty, but loaded with cream cheese and sour cream.
I put my thinking cap on and came up with this baby..
guilt-free buffalo chicken dip
2 tablespoons chipotle peppers in adobo sauce
1 jalapeño, chopped
1/2 onion, chopped
2 tablespoons chopped hatch chilis ( you can find these in small cans in the Mexican section of you grocery store )
1/2 cup low fat coconut milk
2 boneless chicken breasts
1 green onion
Basically, add everything except the green onion to a small crock pot.
Cook on low for about 4 hours, or until chicken is tender.
Using 2 forks, shred chicken and garnish with sliced green onions.
The coconut milk gives it just a bit of creaminess..
You can use it as a dip, with baked corn tortillas
You can dip celery sticks in it
You can eat it straight up!
