Ok… so not REALLY a cookie..

Today was my husband’s 98 year young grandmother’s Christmas party

 Given the fact that I was a bit tight for time… I decided to make toffee!!!

Once again I went to my old trusty wooden box to dig out a hand-written recipe card. This is such a great recipe… it just goes to show how a few simple ingredients can morph into something wonderful!!

The Recipe :…. You need a candy thermometer for this…. it is well worth the small investment

1 cup butter cut into small pieces
1 cup dark brown sugar ( I had light brown, so I used that)
2 TBSP water
1 cup finely chopped almonds
3/4 cup semi-sweet chocolate chips

Combine butter, brown sugar & water in a saucepan. When sugar is dissolved, whisk in 1/2 cup of the almonds.  Insert candy thermometer & cook until the thermometer reaches the ‘hard crack’ *giggle* stage.. 290-300 degrees.

When hard crack stage is reached, pour onto parchment paper-lined cookie sheet. ( be careful.. it is VERY hot) Add chocolate chips & allow to melt for a minute. Use a spatula to spread all around. Add remaining almonds while still hot.

Allow to cool. ( I live in the northeast & since it was freezing out today, I was able to go to my ‘deep freeze (my porch *grin* ) & the toffee hardened in no time.

yes, I took a corner off of the sheet.. I *had* to make sure that it was hard enough!!!

I then took a VERY scientific method of turning this sheet into little pieces of mouth-watering perfection… my hands!!!! I broke it all up &

VOILA!!!!!  perfection ….

I am so going to gain weight creating this blog……..

A cookie party story

I know that I have mentioned that I host a cookie party each year.. but how did I start it? …..

Many years ago I worked with a girl who was  close in age to me,Cheri. Although close in age we could not have lived more different lives…… I was married with 2 (maybe 3 children, I forget what year this happened).. she was a bar-hopping local -band loving diva…  Don’t get me wrong,…. there is nothing wrong with that….

Anyway, she was also a bargain shopper (something that we both had in common); one day while combing the shelves for a deal she came across ‘cookie exchange ‘ invitations. … I had never heard of such a thing (I had previously baked for  entire months in order to have a variety of cookies…) but .. how cool did it sound???

She decided to have a cookie exchange;  Another  that we both worked with,  Cheryl, decided to host it at her house. In addition to the three of us, Cheri invited all of her night-club friends.

The night of the party (a Friday night in mid-December)… we three were the only ones who showed.   I t never occurred to Cheri that her bar-hopping friends might not exactly be the cookie-baking kind of crowd, especially on a Friday night.

Since we worked together, we had talked prior to the exchange about what kind of cookies we were making…. I was making pecan balls, Cheryl was making Mexican wedding cookies, and Cheri was making snoballs.

This is interesting only because well, they are actually all the same cookie.  (we obviously didn’t figure this on until the exchange ).

So we all came home with the same cookies that we brought with us. That night we decided that I would host the next one ; I would have the quests tell me which kind of cookie that they were bringing when they RSVP’d.

Now that I just went on way too long about this, I can tell you that pecan balls.. are quite possibly my favorite cookie…. and I think of this story each time that I make them 😉
And now….

The recipe…

If you notice in the picture, I had to go way back into my files, to  before computers, to get the old beat up index card that I wrote the recipe on so many years ago…I will always keep that recipe card.. it’s the nostalgic side of me… somehow even typing it here seems wrong..

1) 1 stick of butter, softened
2) 2 TBSP granulated sugar
3) 1 tsp. vanilla
4) 1 cup finely ground pecans
5) 1 cup flour
 powdered sugar

*** preheat oven to 300 degrees. Beat butter until soft ~add sugar and blend until creamy. Add vanilla, pecans & flour. Roll into small balls.

Bake on a greased ( I use either a silpat or  parchment paper, neither of which I had or knew about back then)… for 30 minutes.

Roll in powdered sugar while hot.**

ok… this picture is just horrible.. please don’t supersize it. I put the picture in to actually show my mistake. The reason that they look like this is that after I rolled them in sugar, I just put them in a pile, so the coating came off of some of them  & I ‘tried’ to fix it.

In the future, after I roll each one, I would let them cool INDIVIDUALLY on a cooling rack. Rest assured… these cookies were just as awesome as I remember them. .. I almost didn’t get any of them to the freezer because my family was all over them.

I created a diversion in the other room & snuck in to save some for them freezer *grin*
I’m good like that!

A fun no-bake cookie!!

Today’s  ( or should I say yesterday’s ) cookie is one that I haven’t tried to make yet.. The recipe comes courtesy of my friend, Jill… ( thanks, Jill)

I’ve really enjoyed  The Crock pot Lady‘s blog .. and the format that she uses. So, I am following what she did by taking a photo of the ingredients before hand.

Ingredients : 1 package of Oreo or Oreo-type cookies
                     1 package of cream cheese, softened
                     1 Package of chocolate (white or milk chocolate)
                      Holiday sprinkles (not pictured)

1) put oreoes in food processor & blend until fine.
2) mix with softened cream cheese; then roll them into approximately 1-inch balls
3) freeze briefly while melting chocolate.

Remove cookies from freezer & 1 by 1, dip them in the chocolate & put on a cooling rack. Sprinkle with sprinkles right away. ( Ali & I found this to work much better with both of us helping..I was queen of the sprinkles *wink*)

Allow to cool until chocolate hardens.
Pour yourself a big glass of milk & enjoy.

My daughter, Alison actually made these cookies ( since my dishwasher went to dishwasher heaven this morning & I had had to hand wash 3 loads of dishes)

the result? Although the recipe didn’t make all that many ( I supposed we could have made smaller cookies) they are quite rich & very tasty!!

December 4th??

Yes, I realize that today is the 4th ~ I have just started the blog, but that doesn’t mean that I haven’t started the cookies!!!!

A few years ago, I had made a lemon cookie for a cookie exchange that I hosted (I’m all about the cookies ;)… Many of my friends commented on them.

The following year, I had another party, and I made Florentines (yum!)…. Well everyone was asking where were the lemon cookies? The problem was, I couldn’t remember what recipe that I had used!!

I promised that I would figure that out before this years’ cookie party. I had many recipes lined up to try, but guess what?? I got it on the first try!!!

Giada’s Lemon Ricotta Cookies

I made a batch & had many  who sampled, and everyone agreed that this IS the recipe!!.. I ran out of confectioners’ sugar, so this batch doesn’t have glaze…… hang tight, the next batch will!

The other recipe that I made was a  Savory Biscotti recipe, also by Giada..  ( youwill see her name come up a lot)

This was a very simple recipe and very , very tasty. You can’t really think of it as a cookie… think of it as an awesome cracker, or soup accompaniment……
I am not too sure about how they freezer, so I have a few in the freezer no to see if they will still tatse as good when thawed….. again

( I’m trying to catch up!!)

And so December has begun

Many years ago, when my children, now 14, 16 & 22 were little, I took the month of December and baked a different cookie recipe each day. I would freeze a good portion of the cookies… On Christmas Eve I pulled from my freezer a wonderful array of cookies!!   I had the kids in the kitchen helping me all the time.

Remembering that year with fond memories, I have decided to do that again this year, and I will share my recipes & experiences with you!!

P.S… that adorable little Elf in the corner up there, is Farkle.. our elf on a shelf…. He is very good to us….

He surprised us with a lovely Advent Calendar on Monday..

 He magically fills it with all sorts of surprises!!!!!
